For the Cajun Chicken Tenders:
  • 1 pound chicken tenders

  • 2 tablespoons Cajun seasoning

  • 1 teaspoon garam masala

  • 1 tablespoon olive oil

  • Salt to taste

For the Wrap:
  • 4 large tortillas

  • 1 red onion, thinly sliced

  • 2 tomatoes, diced

  • Green chili, sliced (optional garnish)

  • 1 zucchini, sliced and char-grilled

  • Fresh coriander, chopped

For the Dipping Sauces - Pick your favourite(s):
  • Honey Mustard Sauce: Mix 1/4 cup mayonnaise, 1 tablespoon Dijon mustard, 1 tablespoon honey, and a squeeze of lemon juice.

  • Garlic Aioli: Combine 1/2 cup mayonnaise, 1 minced garlic clove, 1 teaspoon lemon juice, and salt to taste.

  • Ranch Dressing: Blend 1/2 cup buttermilk, 1/4 cup sour cream, 1 tablespoon chopped dill, 1 tablespoon chopped parsley, 1 minced garlic clove, and salt and pepper to taste.

  • Guacamole: Mash 2 ripe avocados, then mix with 1 diced tomato, 1/4 cup finely chopped onion, 1 minced garlic clove, the juice of 1 lime, and salt to taste.


Step 1: Marinate the Chicken Tenders

In a bowl, combine the Cajun seasoning, garam masala, olive oil, and salt. Add the chicken tenders and toss until well coated. Allow to marinate for at least 30 minutes.

Step 2: Cook the Chicken Tenders

Heat a grill pan over medium heat. Cook the marinated chicken tenders for 4-5 minutes on each side, or until fully cooked and slightly charred. Set aside.

Step 3: Prepare the Wraps

Warm the tortillas on the grill pan for about 30 seconds on each side. On each tortilla, lay a bed of red onion slices, diced tomatoes, and char-grilled zucchini slices. Add the cooked Cajun chicken tenders. If using, sprinkle with green chili slices and fresh coriander.

Step 4: Roll the Wraps

Fold the bottom of the tortilla up over the filling, then fold in the sides and roll tightly. Secure with a toothpick if necessary.

Step 5: Serve with Dipping Sauces

Serve the wraps immediately, accompanied by the prepared dipping sauces: honey mustard, garlic aioli, ranch, and guacamole.
